Lipases are enzymes that break down fats into glycerol and free fatty acids. In food production, they are used to enhance flavor and texture in dairy products, baked goods, and meat. Lipases are particularly important in cheese making, where they contribute to the development of characteristic flavors and aromas.
Outside of food, E1104 is used in detergents, biofuels, and medical treatments for digestive disorders.
Potential Risks and Side Effects
They are generally safe for consumption. However, excessive intake may cause gastrointestinal discomfort in sensitive individuals. Occupational exposure to the enzyme powder may cause respiratory or skin irritation.
